This is an overnight cold dashi so ideally make it the evening before you plan to use it.

Ingredients:

2 pieces of dried atlantic kombu

4 dried shitake mushrooms

4 fresh shitake mushrooms

Fresh leaf of wild garlic

1-litre cold water
Steps:
- Place dried shitake & kombu in the lunchbox. Cover with 1 litre cold water and leave in the fridge overnight.
- Slice fresh shitake and 1 small leaf of wild garlic.
- The next day strain off the liquid into a saucepan on a medium heat.
- Add mushrooms and wild garlic to vegan dashi liquid and gently simmer for 10 minutes.
- Add 2-3 soaked shitake for a deeper shitake flavour.
